I have been seeing all these fruit salads pop up recently..and for some reason I am always hesitant to try any, but I always love them when I do, so I am really not sure why my mind keeps on telling me these things. When I wandered upon this recipe for a Peach Arugula Salad I knew I needed to try it. I LOVE love LOVE this salad. It is perfection to me. Light, fruity, delicious, peppery, fresh and oh umm delicious (wait did I say that already?) Fresh, Ripe Peaches to perfection, this is a great way to utilize summer fruit in a dish that is not a dessert (in my case it was my dessert tho...ate the left overs for dessert so it wouldn't go to waste!) and it literally takes 5 minutes to make. Takes no time away from doing what this week is dedicated to, relaxation :)
Right now I am at Cayuga Lake at my family's cottage enjoying the weather and escaping the fast paced angry/stressed outness that Northern VA/DC can be. I also luckily missed the huge storm where the entire area lost power/trees were everywhere/not fun times.
My aunt, usually loving my healthy experiments loved the salad too, only thing that she said was that she would have preferred the cheese to be the same size as the peaches (and more peaches! granted while cutting the peaches for the salad I prob ate 1/4 of each peach...oops!). My uncle tried it and said he liked everything except for the arugula...he does not like greens-at least I got him to try it!
Peach Arugula Salad with Basil Oil
~3 cups Arugula
4 oz Mozzarella cubed
3 ripe Peaches sliced thinly
1 cup of basil
3 Tb olive oil
2 Tb White Wine Vinegar
1. In a large bowl mix together first three ingredients
2. In a blender/food processor mix together basil, olive oil and vinegar until blended ~10-15 seconds and toss with salad.
3. Yes it is this easy, sit and enjoy :)
-The original recipe suggest putting in pecans/walnuts which I am sure would be nice but I just left them out
-You can split this between 2-4 people depending on what part of the meal you want this salad to be. It was my main course, when you divide this up into 3 servings...it is about 285 calories...not bad for a meal! Some grilled chicken would be delicious in this!
