Cookie Butter Buttercream Cupcakes

Ever had cookie butter? Do yourself a favor and run to Trader Joe's and get some ASAP. If you don't have a TJ's near you, beg someone who does have one near you to send you one. It's that good. While getting several people addicted to it (my coworker has already gone through a couple of jars), I was trying to think of another way to use it besides eating it by the spoonful...then I had it...Cookie Butter Buttercream. Genius. This delicious masterpiece was loved by all, and turning it into a buttercream added another delicious element to the Cookie Butter. The coworker mentioned above ate three, and another made a slightly sexual reference after taking the first bite of the cupcake-I'd say it was a success. 


Ingredients
Cake (whatever makes 24 cupcakes-I used yellow cake mix)
Stick of Butter at room temperature (8TB)
3 3/4 cups powder sugar
1 tsp Vanilla (optional... omitted because I couldn't find any)
2 Tsp milk

1/3-1/2 cup Cookie Butter


Directions
1. Using a mixer whip the butter for 30-60 seconds until smooth
2. Gradually add the sugar, about a cup at a time
3. Add the other 3 ingredients until well blended (if you want it a little thinner you can add a little more milk)

4. Ice cupcakes/cake and enjoy :)

  2. Ok... what is cookie butter?? That sounds dangerous. And amazinggg! Is it a spread that tastes like cookies? I have a TJ's by me but its like 20 min out? Need to make a stop :)

    1. they are a slight gingerbread like flavor-Belgian Cookie called Speculoos...but it is amazingness in a jar! I would highly recommend it!

  4. I am happy to say TJ's has arrived in the Dallas/Ft Worth metroplex-hurrah! This is a great recipe and it does open the door to using different spreads when making icing, so my mind is reeling with all the different variations. Great post!
