White Chocolate Coconut Cookies

I don't know what else to say but to make these cookies...I made 3 dozen, and 2 dozen were gone with in an hour of taking them out of the oven (aunt, uncle + 2 construction works). The only reason all of them were not demolished is because I yelled a them that I had yet to take a photo, and then I hid those away for coworkers/friends. Brought the rest to work, and they were gone before noon. I am not a huge fan of white chocolate, but they are spectacular in these cookies combined with the coconut.

8/1/12 : I have made these a few more times, and they have all gotten scarfed up! A winning cookie recipe :)

White Chocolate Coconut Cookies

1 1/4 cups flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 stick (1/2 cup) softened butter
1/2 cup packed brown sugar
1/2 cup white sugar
1 egg
1 teaspoon vanilla extract
1 heaping cup of coconut
3/4 cup white chocolate chips

1. Preheat oven to 350 degrees. In a bowl mix together the first 3 ingredients (flour, soda, salt).
2. In another bowl, cream together the butter, white and brown sugars until smooth. Then add in the vanilla and egg. Once mixed gradually add the flour mixture.
3. Once everything is blended, fold in the coconut flakes and white chocolate chips.
4. This next step is optional. Put the cookies in the fridge for about 10-15 minutes to firm up and then using a small cookie scoop/ heaping teaspoon but them onto an un-greased cookie sheet and put in the oven for 8-10 minutes until lightly toasted. Cool on wire racks.

-I suggested putting the cookies in the fridge to firm up some before baking so the cookies didnt flatten out as much. Totally optional, cookies are delicious either way!

  4. Great blend of flavors here-especially the "heaping cup of coconut"! That is one thing I do not skimp on. Tropical treat for the cookie jar-well done!
