Baileys Brownies with Baileys Frosting

Saint Patty's Day may have been a few weeks ago, but this is a great recipe year round. I mean Baileys + Chocolate = Winning. Adding Baileys is a good way to easily spice up a boxed brownie mix. Happy birthday to my adorable nephew who turned 3 on St Patty's day. Most adorable thing ever!
Baileys Brownies with Baileys Frosting

1 Box Brownie Mix (recommend Ghirardelli )
1 egg
1/3 cup Baileys
1/3 cup oil
tsp vanilla extract
Stick of room temperature butter
3-3 3/4 cups powder sugar
tsp vanilla
3-4 Tb Baileys

1. Preheat oven to 325 degrees. Mix together all of the brownie ingredients and put in a pan with baking spray (I used a 9x9 pan)
2. Cook for about 30 minutes (luckily I checked mine, something with the Baileys makes the brownies cook faster)
3. While brownies are cooling, use a hand held mixer and whip the butter for about a minute. Gradually add the sugar until well blended.
4. Mix together the remaining ingredients to the taste/consistency that you like.
5. Once brownies are cooled, ice, add sprinkles if desired and enjoy.

-I loved these brownies, I kept a few in my fridge that I didn't bring to work and I loved them a day later. I suggest making these a day in advance. The flavors really come together.
-Keep an eye out when making these, they cook quicker because of the Baileys.

  1. Ha! Your nephew looks like one tough cookie in that picture!
Baileys is something that should not just be reserved for St Pats in my opinion! Either are those brownies-yum! Delicious and easy to make-sounds like my kind of recipe, thanks for posting this. Enjoy the day!

  2. OMG your nephew is too cute!! Haha I love the face! These brownies sound amazing and wouldn't you know it, I just bought some Bailey's. That's what I call perfect.timing. :)

  3. Aw, your nephew is absolutely darling! What a great brownie recipe, so many flavors, and, yeah, Baileys can really jazz anything up. Yum!

  4. You can NEVER go wrong with Baileys, I don't care what day of the year it is!
